Rice croquettes with herring and vegetables
Ingredients for about 30 to 40 croquettes
- 160g of rice
- 1 red onion
- 370g of giraumon
- 270g white cabbage
- 100g okra
- 100g of dried herring
- 1 C. teaspoon creole sauce
- 2 branches of cives
- 2 vegetarian peppers
- 1 clove of garlic
- salt (for rice)
- olive oil
- 1 egg
- cassava flour for breading
- frying oil
- 20cl of semi-thick cream
Preparation 25-30 minutes
Cooking: about 2 minutes
Equipment : frying pan, hand blender, food processor, deep fryer
Procedure for preparing the recipe
Start cooking the rice in salted water and a drizzle of oil.
In a pan, brown the finely chopped spices in a drizzle of olive oil. Add the grated giraumon, the finely chopped cabbage and the sliced okra. Add the chopped herring.
Cover and reduce the preparation over low heat, mix from time to time.
Mix the preparation obtained (keeping a little vegetables in the pan, for the sauce) with the cooked rice then add an egg to obtain a consistency that binds easily. Form the croquettes and coat them with cassava flour.
Fry in an oil bath.
Add cream to the mixture of vegetables and herring that you have reserved and let reduce over low heat for a few minutes. Off the heat, mix and serve with the croquettes.
