Turkish cuisine: the recipe of "Adana kebab"

Kebabs are the most popular dishes in the Middle East. Kebab which means "cooked" or "roasted" in Arabic is the name given to meat dishes grilled directly on the fire or cooked without water in a saucepan. Even though each Turkish city has a different kebab specialty, the cities known for their kebabs are located more particularly in the south and south-east of Turkey. The restaurants are called "Kebab" and the name of the kebab is accompanied by the name of the city from which it comes. One of the best known is the "Adana kebab". This kebab from Adana, located in southern Turkey and sixth largest city in the country, is prepared in almost all kebab restaurants. The ingredients needed for the preparation of the Adana kebab:

350 grams of minced veal

300 grams of minced lamb

1 clove of garlic

2 onions

1 teaspoon red pepper

1 teaspoon of pepper

1 tablespoon of hot pepper concentrate

1/2 bunch of parsley

Here is the preparation of Adana kebab:

Cut the onions into cubes. Drain them before putting them in a bowl. Crush the clove of garlic and add it in the same bowl. Mix the minced lamb and veal and add the onions and garlic. Then add pepper, red pepper and hot pepper concentrate. Add a little oil. Add the finely chopped parsley and refrigerate for 2-3 hours. Cover the grates of your oven with lamb fat or butter. Heat your oven to 200 degrees. Thread your meat mixture into flat kebab metal pins and cook for 20-25 minutes on the oven rack.
