"Tous en cuisine": recipes, ingredients and utensils for the week of September 14th to 18th: Femme Actuelle Le MAG

Monday September 14, 2020, the faithful of All in the kitchen will be able to relight their stoves and join Cyril Lignac on M6. From September 14 to 18, viewers who follow the daily cooking show orchestrated by the Aveyronnais and his sidekick Jérôme Anthony will be able to prepare new homemade dishes. This time, the famous chef with the singing accent will teach them how to prepare coconut beans with tomato, baked sausages, boiled eggs in the pan, endives with ham and maroilles, a chicory tiramisu, a fish gratin, chocolate banana nems, a chili con carne or more meatballs, quinoa and carrot chips. Monday September 14

DISH: COCONUT BEANS WITH TOMATO, BAKED SAUSAGES

The ingredients for 4 people :

  • 1kg of peeled fresh coconut beans
  • ½ onion, peeled and chopped
  • ½ carrot, peeled and cut into small cubes
  • ¼ of a stalk of celery, peeled and cut into small cubes
  • 1 clove of garlic
  • 1 sprig of thyme + 1 bay leaf
  • 25g of butter + 20g of butter for the finish
  • 300g of tomato sauce
  • ¼ liter of water
  • 4 sausages of your choice such as Morteau or Chipolatas
  • 4 slices of garlic sausage, a little thick
  • 50g bread crumbs
  • Olive oil
  • Fine salt and freshly ground pepper

Utensils :

  • 1 casserole dish + 1 spatula

DESSERT: CASSEROLE SNOW EGGS

The ingredients for 4 people :

  • 4 eggs
  • 80g sugar
  • 80g vanilla sugar
  • 75cl of whole milk
  • 25g toasted slivered almonds

Utensils :

  • 1 salad bowl + 1 whisk
  • 1 hand mixer or food processor + 1 tablespoon
  • 1 saucepan + 1 skimmer + 1 strainer (optional) + 1 plate

Tuesday September 15th

DISH: ENDIVES WITH HAM WITH MAROILLES

The ingredients for 4 people :

  • 8 endives in the ground
  • 20g butter (for cooking endives)
  • 1.5 liters of stock cubes or vegetables
  • 55g semi-salted butter
  • 55g flour
  • 75cl of whole milk
  • 1 egg yolk
  • 1/2 Maroilles cut into cubes without the crust
  • 25cl of liquid cream
  • 8 thin slices of ham
  • Sugar
  • Fine salt and freshly ground pepper

Utensils :

  • 1 saucepan + 1 skimmer + 1 dish + 1 paring knife + 1 board
  • 1 saucepan + 1 whisk + 1 tablespoon + 1 dish

DESSERT: CHICORY TIRAMISU

The ingredients for 4 people :

  • 7.5g of ground coffee + 20g of chicory powder in a coffee filter
  • + 390g of boiling water in it over a cup
  • 24 spoon cookies, cut in half crosswise
  • 3 egg yolks
  • 105g sugar
  • 150g of mascarpone
  • 375g very cold whole liquid cream
  • Homemade mix for the decoration made by you: 4g of cocoa powder +
  • 6g of chicory powder + 12g of speculoos powder

Utensils :

  • 1 mixer with the well cold tub
  • 1 deep plate + 4 glasses for the tiramisus
  • 1 fine strainer

Wednesday September 16

DISH: FISH GRATIN, LEMON VEGETABLES

The ingredients for 4 people :

  • 800g potatoes, washed and peeled, cut into pieces and boiled in water 15 minutes before preparing the gratin
  • 1 carrot, washed, peeled and grated
  • 2 stalks of celery, washed and finely chopped
  • 3 tomatoes, washed and cut into small 1/2 cm dice
  • 100g grated old mimolette
  • 1/2 bunch of chopped parsley
  • 1 bunch of chopped chives
  • 1 untreated lemon
  • 300g haddock fillet cut into cubes
  • 300g of salmon fillet cut into cubes
  • Olive oil
  • Fine salt and freshly ground pepper

Utensils :

  • 1 salad bowl + mash press or 1 fork
  • 1 salad bowl + 1 microplane + 1 spatula + 1 gratin dish

DESSERT: BANANAS NEMS WITH CHOCOLATE

The ingredients for 4 people :

  • 20cl of liquid cream
  • 15g of caster sugar
  • 250g dark chocolate
  • 4 pastry sheets
  • 1 banana, peeled and cut into a rectangle 3cm long by 1cm wide
  • 2 egg yolks
  • Grapeseed oil or melted butter
  • Homemade raspberry confit (crush together: 125g raspberries + 15g sugar + 1 pinch of green anise)

Utensils :

  • 1 saucepan + 1 salad bowl + 1 maryse + 1 whisk + 1 spoon
  • 1 paring knife + 1 brush + 1 small bowl
  • 1 saucepan + 1 skimmer + 1 plate with a sheet of absorbent paper

Thursday September 17th

MAIN: BOULETTES, QUINOA, CARROT CHIPS

Ingredients for 4 people: Carrot chips:

  • 1 to 2 carrots, peeled and washed, cut into very thin 1 mm slices
  • 3cl of white balsamic vinegar or rice vinegar
  • 16cl of water
  • 1 tbsp. salt
  • 3 tbsp. tablespoons of brown sugar
  • 3 pepper seeds

Dumplings:

  • 500g plain minced pork
  • 1 tbsp. chopped ginger
  • 4 garlic cloves, peeled and chopped
  • 1 tsp. sriracha sauce
  • 1 tsp. tablespoon of fish sauce or soy sauce
  • 1 tsp. tablespoon of sugar
  • 1 tsp. cornstarch

Spicy sauce:

  • 2 tbsp. mayonnaise
  • 3 tbsp. Greek yogurt
  • 1 tsp. sriracha sauce
  • 150g of quinoa cooked in water
  • A few leaves of mint or parsley or coriander
  • Sesame
  • Neutral oil or olive oil
  • Fine salt

Utensils :

  • 1 saucepan
  • 1 salad bowl + 1 pan + 1 spatula
  • 1 small salad bowl + 1 tablespoon

DESSERT: CHOCOLATE MUG CAKE

The ingredients for 4 people :

  • 3 tbsp. tablespoon flour
  • 2 tbsp. cocoa powder
  • ½ tsp. 1/2 teaspoon baking powder
  • 1 egg
  • 2 tbsp. maple syrup
  • 10cl of milk
  • Icing sugar
  • Crushed hazelnuts

Friday September 18

DISH: CHILI CON CARNE

The ingredients for 4 people :

  • 1 onion, peeled and minced
  • 1 tsp. grated garlic
  • 15cl of blond beer
  • 1kg of minced meat
  • 1 tbsp. tablespoon cider vinegar
  • 400g crushed tomatoes
  • 2 tbsp. tomato paste
  • 1 tbsp. 1 teaspoon ground cumin
  • 2 tbsp. teaspoon paprika
  • 2 cups of cooked red beans
  • 1 green jalapeño pepper
  • 1 can of cooked corn
  • A few sprigs of oregano
  • Tortilla chips
  • 2 avocados, peeled and cut into pieces
  • 4 tbsp. fresh cream (optional)
  • A few leaves of fresh coriander
  • 4 lime wedges
  • Olive oil
  • Fine salt and freshly ground pepper

DESSERT: MIRABELLES IN SYRUP

The ingredients for 4 people :

  • 600g of mirabelle plums
  • 150g of sugar
  • 300g of water
