“Tous en cuisine”: recipes and ingredients by Cyril Lignac for the week of October 5 to 9: Femme Actuelle Le MAG

DISH: CATAPLANA WITH SEAFOOD

The ingredients for 4 people :

ENTRY: HOUMOUS

  • 200g cooked chickpeas
  • 1/2 lemon juice
  • 150g tahini

The accompaniments:

  • 2 hard-boiled eggs
  • 1 onion, peeled and cut into strips
  • Some pickles
  • 1 to 2 tablespoons of cooked chickpeas
  • 1 pinch of ground paprika
  • A few leaves of chopped parsley
  • Pita bread
  • Fine salt

DISH: FALAFELS

The ingredients for 4 people :

  • 350g dry chickpeas soaked in water the day before and refrigerated
  • 150g of dry broad beans soaked in water the day before and refrigerated

  • 3 garlic cloves, peeled and degermed
  • 1 tbsp. ground cumin
  • 1 tbsp. powdered cardamom
  • 2 tbsp. chickpea flour (optional)
  • 1 bunch of parsley, washed and stripped
  • ½ bunch of washed and stripped coriander
  • 1 tsp. baking soda
  • 1 small bowl of fine couscous semolina
  • Olive oil

Green thina sauce:

  • 100g tahini paste
  • 50g lemon juice
  • 1 garlic clove, peeled and degermed
  • ¼ bunch of coriander, washed and stripped
  • 100g of water
  • 90g olive oil

  • 1 mixer + 1 maryse + 1 spoon to mold the falafels
  • 1 small blender + 1 small bowl + 1 spatula

Thursday October 8:

STARTER: LAMINATED MUSHROOM PIE

The ingredients for 4 people :

  • 1 puff pastry
  • 1 onion, peeled and finely chopped
  • 20g butter
  • 400g Paris mushrooms, washed, cut and chopped
  • 500g small and pink mushrooms, washed and cut into thin 3mm slices

MAIN: FISH IN A SALT CRUST, VEGETABLE VIRGIN

  • 10cl of egg whites
