-340 g of egg whites
-7.5 g fine salt
-55 g brown sugar
-190 g of Étrez butter
-2.5 g of vanilla bean powder
-35 cl of whole milk
-310 g of type 55 flour

In the bowl of a mixer, combine the egg whites, salt and brown sugar. Work them with a whisk to make them rise. Bring the butter with the vanilla powder to a boil. Add the cold milk, then go to the Chinese. In the bowl of another mixer, sift the flour. Whisk at medium speed, gradually add the previous mixture. Mix the two devices using a Maryse without dropping the whole. Heat the waffle iron to 200 ° C. Use a medium ladle with a capacity of 20 cl (10 cm in diameter). Pour the batter onto the waffle iron. Wait 10 seconds before closing it. The cooking time varies depending on the appliance: stay alert. Generously sprinkle each waffle with icing sugar and serve on hot plates.
