The recipe for the tomato and goat cheese tart by Jean-François Piège

1 Baked pie shell (shortcrust pastry)
For garnish :
150 g of goat cheese
250 g red, yellow and green cherry tomatoes (depending on size)
1 sprig of basil with flowers (optional)
Salt and pepper from the mill
16 cm diameter pastry ring
Mash the goat cheese with a fork, then add a few chopped basil leaves, a drizzle of olive oil and a twist of the pepper mill. Mix.
Spread the goat cheese in the bottom of the pie, then arrange the cherry tomatoes cut into strips.
Drizzle with olive oil, add some basil leaves and flowers (optional), then sprinkle with salt and pepper.
