Ingredients for 4 persons)

  • 1kg of beef cheek

  • 75cl of dark beer

  • 3 onions

  • 1 tbsp of brown sugar

  • 2 tbsp of level flour

  • 2 slices of gingerbread

  • 1kg of carrots

  • 1 cinnamon stick or 1 teaspoon ground cinnamon

  • 1 tbsp ground cumin

  • 1 bunch of coriander

  • Olive oil

  • Salt and pepper from the mill

Preparation (cooking time: 2h)

Preheat the oven to 180 ° C (th 6).

Slice two onions. In a casserole dish, brown the beef in a little oil, coloring it on all sides. Add the onions and cook for 5 minutes until they become translucent. Add the brown sugar, cinnamon, gingerbread and flour, mix.

Deglaze with the beer, salt then cover and bake for 1h30. Peel and wash the carrots before cutting them into slices. Steam them or in a saucepan of salted water for about fifteen minutes, drain. In a pan, drop a drizzle of olive oil, add the cumin, then the carrots, salt and pepper and sprinkle with chopped cilantro.

At the end of cooking, serve the cheek accompanied by the cumin carrots.
