The recipe for a cake with vine peaches and verbena syrup – archyworldys

It is at the beginning of September that the vine peach, also called blood peach, reaches its full maturity. With its gray skin, fluffy to the touch and red flesh, it is particularly tasty and juicy. Here is our cake recipe that magnifies these pretty fruits, flavored with a syrup of fresh verbena.

Difficulty: accessible

Time: 45 mn

Cost: 1.20 euro / pers

The ingredients for 6 people

. 4 vine peaches

. 125 g of soft salted butter

. 100 g of brown sugar

. 2 eggs

. 240 g flour

. 1/2 sachet of yeast

. 130 g milk

For the syrup:

. 150 g of water

. 130 g sugar

. 2 sprigs of fresh verbena

The steps of the recipe

1. We apply

Butter a springform pan about 25 cm in diameter.

Cut the peaches into thin slices then arrange them in a round in the bottom of the mold in one or two layers.

2. We dabble

Preheat the oven to 180 ° C.

Beat the soft butter with the sugar then add the eggs, mix, add the flour, the yeast then the milk. Mix well then pour this paste on the fruits. Smooth the surface with the back of a spoon. Bake for 30 to 35 minutes.

3. We infuse

Melt the sugar in a saucepan over low heat with the water then add the verbena twigs off the heat. Cover and let steep for about 30 minutes.

4. We imbibe and we marvel

Take the cake out of the oven, pour the syrup over it, let it soak up the hot liquid, then turn it over on a serving platter, admire and eat right away!
