The recipe for madeleines by Juan Arbelaez

For 20 madeleines
-150 g of unsalted butter + to butter the baking sheet
-4 whole eggs
-2 egg yolks
-135 g of sugar
-1 vanilla bean
-125 g of flour + to flour the baking sheet
-5 g of baking powder
-grated zest of an organic lime
-1 pinch of salt
-150 g of dark chocolate

1. Madeleines dough
Preheat the oven to 210 ° C. Melt the butter in a saucepan over low heat. When it foams, watch until it takes on a slightly amber tint and a nutty smell emanates. Let cool in the pan. Mix the whole eggs and the yolks with the sugar and whisk on high speed until the mixture turns white. Split the vanilla pod and collect the seeds. Sift together the flour and baking powder and add to the egg + sugar mixture. Mix and add the vanilla seeds, lemon zest, a pinch of salt and the cooled brown butter. Mix again.
Butter the madeleine sheet and drop a veil of sifted flour on it. Pour the dough into the indentations. Bake for 8 minutes, then open the oven door, lower the temperature to 170 ° C, close the oven door and cook for another 3 minutes.
3. Finishing
Melt the chocolate and soak the madeleines before tasting.
