Recipes transformed, lost or forgotten …
Laurent Mariotte, the culinary columnist for television and radio, is behind this original documentary about cooking and its transmission.
Associated with director Francis Gillery, with whom he shares a taste for gastronomy, they began an investigation in the past, looking for recipes difficult or impossible to find in food shops or locals.
This is to discover by exhuming, recipes of the New Aquitaine region that could be said "forgotten". To be interested in the why of their disappearance which often goes hand in hand with the reasons and conditions of their appearance.
Thus, the choice was made of four specialties highlighted in the film: the original recipe of the Ortolan, the legend of the Lamb Milk Ambote, typical dish of the shepherds, the Basque cake and Jonchée Rochefortaise (cheese local).
Tasting of ortolan
This practice consisted in tasting the head, the bones and the body of this little bird in a single steaming mouthful, the head covered with a towel.
Consumption now banned since the population of this little passerine has dropped by 84% in 30 years, making it the most threatened in Europe.
To better understand what it is, the famous Maïté had explained, in front of the camera, the art and the manner of this particular tasting.
The opportunity to recall that Maïté had made his debut on television on France 3 Aquitaine with "The kitchen of the Musketeers" before the national antenna does not mark it to give him, subsequently, the notoriety that we know him. ..
A real taste survey
The choice of the form of polar is a bias in this film "to give relief and suspense to the story" as Laurent Mariotte explains.
In the form of an inquiry, the narrator, who is none other than Pierre Arditi, questions our culinary heritage and its transmission, to discover the polemics around each unique taste.
With the help of photo and animated archives, it is a journey in the region and in time that is proposed, to plunge back into the era of the recipe and the life of that time.
A real call to memory also by questioning the inhabitants of the region and bring back the memories and know-how of these recipes of yesteryear.
And to link history to the present, the word is given to renowned chefs such as Michel Guérard "The meadows of Eugenie", the Landes Alain Dutournier "The Carré des feuillants" or Jean Coussau "The Relais de la Poste".
Other contributors also provide additional elements to the survey: Alain Bougrain-Dubourg, President of the League for the Protection of Birds, Dominique Bussereau, President of the County Council of Charente-Maritime or Philippe Mondenx, member of the brotherhood of the Panturon of Rion des Landes.
So, place to history, memory, flavors, traditions and tasting, in search of lost taste in New Aquitaine …
