RECIPE – Try this easy Salmon with Pesto and Cheese Rice recipe, concocted by Chef Jonathan Garnier and presented by SB cuisine Zeste. A great idea for a simple meal the whole family will love!

Portions: 4 – Preparation: 10 minutes – Cooking: 25 to 30 minutes

Ingredients

  • 4 salmon steaks
  • 45 ml (3 tbsp.) Olive oil
  • Pesto
  • 125 ml (1/2 cup) nuts (pecans, walnuts, pine nuts, etc.)
  • 125 ml (1/2 cup) parmesan, grated
  • 12 basil leaves
  • 1 garlic clove, chopped
  • 250 ml (1 cup) arugula
  • 125 ml (1/2 cup) olive oil
  • 45 ml (3 tbsp.) White or red balsamic vinegar
  • Salt and pepper to taste

Rice with cheese

  • 500 ml (2 cups) jasmine rice
  • 750 ml (3 cups) vegetable broth
  • 30 ml (2 tbsp.) Butter
  • 1 egg
  • 250 ml (1 cup) Emmental de Charlevoix, grated
  • Salt and pepper to taste

Preparation

STEP 1

Preheat the oven with the rack in the center to 200 ° C (400 ° F).

2ND STEP

In a hot pan, sear the salmon steaks in olive oil, 1 minute per side.

STEP 3

On a baking sheet, place the salmon steaks and cook in the oven, 7 to 8 minutes, for a rosy cooking to the heart.

STEP 4

Meanwhile, in a bowl, using the blender, puree the nuts, Parmesan, basil, garlic, arugula, olive oil and vinegar. Check the seasoning.

STEP 5

In a saucepan, bring the rice and broth to a simmer. Then reduce the heat to a minimum, mix, cover and cook for about 10 minutes, until the liquid is absorbed.

STEP 6

Stir in the butter, egg and grated cheese. Check the seasoning.

STEP 7

In a gratin dish, pour the rice and leave to brown in the oven for 15 minutes.

STEP 8

Serve the gratinated rice and the salmon topped with the prepared pesto, accompanied by a grilled vegetable of your choice.
