Ingredients for 1 sandwich

  • 1 ciabatta sandwich bread or pita bread
  • 50 g yogurt
  • 1 slice of candied lemon
  • 3 wild garlic leaves (or 1 clove of blanched garlic)
  • 200 g oyster mushrooms
  • 1 clove of garlic
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of cumin, 1/2 teaspoon of ground coriander
  • 1/4 red onion
  • green salad, or lamb’s lettuce, or purslane
  • salt pepper

Recipe

Preheat oven to 200 degrees.

Coarsely chop the oyster mushrooms, mix in a bowl 1 tablespoon of olive oil, 1 chopped garlic clove, the spices, salt and pepper with the oyster mushrooms

Bake for 20 minutes at 200 degrees until you obtain a nice caramelization

Make the white sauce: mix the yogurt, the chopped candied lemon, the chopped wild garlic (or a clove of garlic, blanched then chopped), 1 tablespoon of olive oil, salt and pepper

Toast the bread, and garnish it with the oyster mushrooms, white sauce, chopped red onion and salad
