We are in autumn, the ideal season to go out to pick mushrooms and to taste them. For the occasion, we are showing you a recipe for delicious ravioli with mushrooms and nuts.
Ingredients for 4 persons:
- 240 g of mushrooms of your choice
- 200 g of flour (special pasta)
- 80 g of grated Comté
- 60 g walnuts
- 2 eggs
- 2 shallots
- 2 tablespoons of chopped parsley
Peel and cut the shallot into pieces. Then clean the mushrooms and roughly chop them before sautéing them in a pan in a little olive oil for 5 minutes. Once the mushrooms have absorbed all the oil, add the walnuts and parsley. Then, mix the stuffing without making a puree and add the Comté.
On your work surface, form a well with the flour, in the center of the latter place the eggs. Mix everything to obtain a homogeneous paste that does not stick, do not hesitate to add a little water if necessary. Then spread the dough thinly on your work surface that you will have floured beforehand. Then cut out circles of 7cm in diameter and lightly moisten the edges with a brush and a little water.
Place a tablespoon of stuffing in the center of each circle and seal with another disc of dough, pressing down well on the edges so that they stick together. Then flour the ravioli to prevent them from sticking together. You can then cook them in salted boiling water for 3 to 4 minutes.
Serve as soon as it's done. You can serve your ravioli with a forest sauce or a Comté sauce.
