Ingredients

  • 4 Quebec eggs
  • 2 avocados, halved
  • 60 ml (4 tbsp.) Caramelized onions
  • 4 slices of smoked salmon
  • 1 pinch of chilli flakes
  • 125 ml (1/2 cup) cheddar cheese, grated
  • Salt and pepper to taste

Caramelized onions

  • 2 red onions, thinly sliced
  • 45 ml (3 tbsp.) Olive oil
  • 15 ml (1 tbsp.) Honey
  • 2 garlic cloves, chopped
  • 30 ml (2 tbsp.) White vinegar
  • Salt and pepper to taste

Preparation

STEP 1

Preheat the oven with the rack in the center to 200 ° C (400 ° F).

2ND STEP

In a hot pan, sauté the onions in olive oil, 2 to 3 minutes.

STEP 3

Add the honey, garlic, vinegar, season lightly, lower the heat and cook for another 5 minutes.

STEP 4

Lightly hollow out the inside of each avocado half.

STEP 5

On a baking sheet, covered with a silicone mat, arrange the avocado halves and in each hollow, place 1 tbsp. tablespoons of caramelized onions, a slice of smoked salmon, an egg, then spread the pepper and cheese again and cook in the oven for 10 to 12 minutes.
