Every lunchtime, until the restaurants reopen, we offer a recipe to make at home. Here, for Sunday, is the elegant and tasty red rice salad from the emperors and calamari from the house of Sabarot, near Puy-en-Velay. Enjoy your meal everybody !
Ingredients for 2:
200g of emperors' red rice
100g cooked white beans
50g candied tomatoes
1/4 bunch of parsley
1 lemon juice
- Cook the red rice by absorption for 35-40 minutes. Let cool.
- Add the lightly chopped capers, the browned tomatoes, the chopped parsley and the cooked white beans.
- Season with olive oil, lemon juice, salt and pepper.
- Fry the squid in olive oil, season. Deglaze with a dash of lemon.
- Serve immediately.
