Cut the apples into strips, sprinkle them with lemon juice.
Peel the pear and cut it into pieces.
Cut the cheese into strips. Brown the croutons in a pan with the oil, salt and pepper.

Crack the nuts then roughly chop the kernels.
Cook the eggs for 5 minutes in a pot of boiling water then let them cool before gently breaking their shells.
Squeeze half an orange and half a lemon, mix the juices with the other ingredients for the sauce.
Wash the salad, wring it out carefully.

Combine all the ingredients nicely, pour in the sauce, place one egg per plate, some croutons, nuts and serve.
