Two apples of different varieties, a pear, a seasonal salad (for example an escarole, a chicory, spinach or lamb’s lettuce), dried fruits, eggs and a little sheep cheese … You will love this winter meal salad full of vitamins!

The ingredients for 4 people

  • 1 crunchy, juicy red apple
  • 1 tart green apple
  • ½ lemon
  • 1 firm pear
  • 6 nuts
  • 1 small winter salad
  • 2 tbsp. to s. raisins
  • 2 tbsp. to s. mixed cranberries, cherries and blueberries
  • 200 g of tomme d’Aspe (raw milk ewe)
  • Some croutons
  • 3 tbsp. to s. olive oil
  • 4 eggs
  • Salt and pepper

For the sauce:

  • 1/2 orange
  • 1/2 lemon
  • 1 C. to s. honey
  • 1 C. to c. mustard
  • 1 C. to s. balsamic vinegar
  • 1 C. to s. sesame oil
  • 4 tbsp. to s. olive oil

The steps of the recipe

1. We must decide …

Cut the apples into strips, sprinkle them with lemon juice.

Peel the pear and cut it into pieces.

Cut the cheese into strips. Brown the croutons in a pan with the oil, salt and pepper.

2. … then break

Crack the nuts then roughly chop the kernels.

Cook the eggs for 5 minutes in a pot of boiling water then let them cool before gently breaking their shells.

3. Mix

Squeeze half an orange and half a lemon, mix the juices with the other ingredients for the sauce.
