The oyster season is in full swing! Although this little pearl of salt water can be eaten year round, it is found in abundance in fishmongers, between September and December.

There are a hundred varieties of oysters, available across the world. In Canada, more than 25,000 tonnes of shellfish are caught each year, a large majority of which are in British Columbia.
