Gourmet, comforting and full of vitamins, soups are not lacking in strengths. They can even constitute a complete meal or be available as a sweet for dessert.
To make a simple vegetable soup more delicious, do not hesitate to add a bouillon cube in the cooking water or brown with your vegetables, before cooking them, a few slices of onions and shallots with thyme and Laurel.
Homemade garlic croutons and sautéed in olive oil will give it a Mediterranean touch.
Spices will be the allies of soups that want to stay light: nutmeg, curry, cumin… will enhance the taste of your preparations without adding calories.
And if your weight is the last of your concerns, then all the delicacies are possible: pieces of grilled bacon, cream, cubes of blue cheese, coconut milk… All the subterfuges are possible to forget the cold!
Peel and wash the potatoes. Drain and then cut them into small cubes.
Peel and finely chop the onions.
In a Dutch oven, melt the butter, sweat the onions and potatoes over low heat.
Add the vegetable stock cubes, cover with water to the height. Season, cover and cook for about 30 minutes.
In a saucepan, heat the milk. Mix the cooked potatoes and the hot milk gradually poured in.
Serve the soup in bowls, add a touch of crème fraîche. Sprinkle with crushed hazelnuts and add a sprig of chervil just before tasting.
