This Thursday, Loïc reveals the recipe for ravioli stuffed with scampi in diabolical sauce. This is Ella, his girlfriend’s favorite food. A perfect idea for Valentine's Day.
200g of flour
1 can crushed tomatoes
Mix 2 eggs and 200g of flour, a pinch of salt and a little olive oil
You must obtain a homogeneous and smooth mixture. Let the dough rest for 3 minutes at fridge
Peel the scampi. Keep them carcasses
Brown the carcasses in a pan with a little olive oil
Chop a shallot and a clove of garlic parts
Add to the pan with 1 tablespoon of Chile powder, 1 bay leaf, a little thyme, pepper and salt
Put the shells in a colander
Deglaze the pan with a little white wine, add a can of crushed tomatoes and 1 canwater
Heat a large pot of salted water.
Chop the shrimp with a mini chopper. Finely chop a few chives.
Mix with the scampi, add a few drops of fish sauce, pepper, salt, a few lemon zest and a little olive oil
Roll out the dough as thinly as possible with a rolling pin. Cut circles with a cookie cutter.
Put the stuffing in a pastry bag. Place a little stuffing in each circle. Moisten the edges of the dough and fold in of them
Drip the sauce and add 10 cl of cream culinary
Cook the pasta for 1 minute, it should float on the surface
Place on a plate with a little sauce
