Coconut curry soup with shrimps

Ingredients

  • 18 raw shrimps, peeled and de-pitted
  • 1 white onion, peeled and chopped
  • 1 lemongrass stalk, thinly sliced
  • 25 g ginger, peeled and cut into pieces
  • 1 garlic clove, peeled and degermed, chopped
  • 20g curry powder
  • 60 cl of coconut milk
  • ½ L of whole or vegetable milk
  • ¼ L of water
  • ½ lemon juice
  • 2 pak choï cabbage
  • ½ green apple, cut into fine sticks
  • A few coriander leaves
  • Olive oil
  • Salt and Espelette pepper

Banana cake

Ingredients

Caramelized bananas

  • 2 lemons
  • 120 g of softened butter
  • 120 g flour
  • 120 g sugar
  • 2 eggs
  • 11 g of baking powder

Cake dough

  • 2.5 bananas, peeled and cut into pieces
  • 1.5 tbsp. chia seeds
  • 90 g of rice milk or other vegetable milk
  • ½ lemon juice
  • 8 g of baking powder
  • 210 g rice flour
  • 90 g sugar
  • 1 tonka bean
  • 40 g melted butter
  • 25 g sesame oil
  • 25 g of grape seed oil

Seafood Cataplana

Ingredients

  • 4 pieces of monkfish 90 g
  • 8 raw pink prawns like prawns
  • 200 g of mussels
  • 200 g of clams
  • 1 onion, peeled and minced
  • 1 green bell pepper, washed, cut into 4 and seeded, peeled, thinly sliced

  • 1 to 2 tsp. cooked chickpeas
  • 1 pinch of ground paprika
  • A few leaves of chopped parsley
  • Pita bread
  • Fine salt

Falafel

Ingredients

  • 350 g of dried chickpeas soaked in water the day before and refrigerated
  • 150 g of dry broad beans soaked in water the day before and refrigerated
  • 1 onion, peeled and cut into pieces
  • 3 garlic cloves, peeled and degermed
  • 1 C. ground cumin
  • 1 C. powdered cardamom
  • 2 tbsp. chickpea flour
  • 1 bunch of parsley, washed and stripped
  • ½ bunch of washed and stripped coriander
  • 1 C. baking soda
  • 1 small bowl of fine couscous semolina
  • Olive oil
  • Frying oil
  • Fine salt

Green Thina Sauce

  • 100 g tahine paste
  • 50 g lemon juice
  • 1 garlic clove, peeled and degermed
  • ¼ bunch of coriander, washed and stripped
  • 100 g of water
  • 90 olive oil

Thursday 8 October

Paris mushroom puff pastry tart

Ingredients

  • 1 puff pastry
  • 1 onion, peeled and finely chopped
  • 20 g butter
  • 400 g Paris mushrooms, washed, cut and chopped
  • 500 g small pink mushrooms, washed and cut into thin 3 mm slices
  • Olive oil
  • Fine salt and freshly ground pepper

My ham and cheese omelet

  • 12 eggs
  • 5 cl of water
  • 2 slices of ham cut into cubes
  • 100 g grated Gruyere
  • 10g butter
  • Fine salt and pepper

Friday October 9

Fish in a salt crust, virgin vegetables

Ingredients

  • 1 fish of 1.5 kg with its head and scales (if the fish does not fit in your oven, have the head cut off)
  • 2 kg of coarse Guérande salt
  • 10 cl of egg whites
  • Dry herbs (thyme, fennel, oregano)

Leek fondue

  • 2 leeks, washed and cut in half
  • 20 g butter
  • 20 cl of vegetable broth

Vegetable virgin

  • 12 cherry tomatoes, washed
  • 1 washed zucchini
  • 50 g of broccoli, cut and washed
  • 1 lemon
  • Olive oil
  • Salt flower
  • Espelette pepper
