Lormont gratton, this famous charcuterie specialty made up of ham, shoulder and pork fat, all salted, peppered, spiced and cooked slowly, for several hours, is still found in certain Gironde delicatessens. Its name would come from scratching the bottom of the pot to get it.

But the “real” Lormont gratton, the one which earned it its reputation, would have disappeared in the early 1980s, when the only charcuterie still holding…
