Ingredients for 16 cookies

– 230 g of unsalted butter

– 100 g of powdered sugar

– 170 g of brown sugar

– 2 whole eggs

– 1 egg yolk

– 1 teaspoon of vanilla extract

– 1 teaspoon of bourbon (optional)

– the zest of half an orange

– 270 g of flour

– 1 teaspoon of baking soda

– 340 g of dark chocolate 70% in pieces

– fleur de sel

1 / Melt the butter for a few minutes over medium heat until it turns a light brown color. Pour the butter and the pieces that have formed into a bowl, and let cool for forty to sixty minutes.

2 / Mix the now cold butter with the sugar and brown sugar using a mixer until you get an almost creamy dough. This will take between three and four minutes. Add the eggs one at a time, as well as the yolk, while continuing to mix. Then add the vanilla, bourbon and orange zest, before mixing everything.

3 / Scrape the edges of the container, and add the flour and baking soda. Stir in the dark chocolate pieces.

4 / Arrange the dough on a work surface, divide it into four and roll them into logs. Wrap these in plastic wrap, and store them in the refrigerator so that they become firm.
