Here is Cyril Lignac's recipe for black sesame cream (All in the kitchen, M6):
Preparation time: 10 minutes
Rest time: 20 minutes
Ingredients for 4 persons
- 50 cl of whole milk or almond milk
- 4 tbsp. to s. black sesame puree
- 25 g of brown sugar
- 25 g of cornstarch
- 2.5 cl of water
- 1.5 cl of orange blossom water (of the best quality)
- 2 tbsp. to s. shelled and crushed pistachios
- 4 tbsp. to s. maple syrup
In a heavy-bottomed saucepan, heat the milk with the black sesame puree, mix with a small hand whisk.
In a bowl, combine the cornstarch, sugar and water.
Pour everything into the milk and cook over low heat, stirring constantly with a spatula, until the cream thickens.
Add the orange blossom at the end of cooking, mix and divide the cream into small cups or small bowls.
Let cool to room temperature then set aside in the fridge until ready to serve.
Before serving, divide the pistachios and add the maple syrup to each cream.
