1-Preheat the oven to 180 degrees.
2-Cut the half-baguette into slices. Put them on a grill with a little olive oil and put them in the oven for 5 minutes, so that they get a nice golden color.
3-Wash and chop the chives.
4-Dice the heart of smoked salmon.
5-Wash and cut the zucchini and chopped onion into small pieces and brown for a few minutes in a hot sauté pan with olive oil. Set aside.
6-Butter 4 ramekins then divide the zucchini, onion, half the chives and diced smoked salmon.
7-Crack an egg in each ramekin. Add a tablespoon of crème fraîche, pepper then put the ramekins in a double boiler and bake them at 180 degrees for 6 minutes.
8-Out of the oven, add the rest of the chives to your casserole eggs and taste them with the croutons.
