The Social Food Burnt Basque Cheesecake with Chocolate and Mezcal


500 g of cream cheese (St Morêt)

200 g heavy cream

150 g of 70% dark chocolate

130 g icing sugar

4 whole eggs

2 egg yolks

20 g of cornstarch

1 shot of mezcal

Preheat your oven to 220 ° C.

Melt the chocolate in a double boiler, then let it cool.

In a salad bowl, whisk the cream cheese, add the cream, sugar and cornstarch.

Add the eggs and the 2 yolks one by one, then incorporate the lukewarm chocolate.

Add the mezcal (or not).

Line a missing mold (ø 16 cm) with baking paper and pour the preparation into the mold.

Bake for 25 minutes at 210 ° C then leave to cool. You can leave it overnight in the fridge and enjoy it the next day (it’s better) or eat it lukewarm, a little runny (but it’s heavier).
