  • 1 kg of beef heart tomatoes
  • 1 large onion, peeled and thinly sliced
  • 20g butter
  • 50g angel hair vermicelli
  • Coarse salt and fine salt
  • Freshly ground pepper

  • 1 salad bowl
  • 1 spatula
  • 1 paring knife
  • 1 piping bag
  • 1 baking dish

The steps for preparing the tomato and vermicelli soup recipe by Cyril Lignac:

Step 1 : in a high and hot saucepan, place the butter, let it melt, add the onion, sweat it without coloring, then add the tomatoes.

2nd step : cover with water to the height, salt with coarse salt and pepper, add a piece of sugar to remove the acidity of the soup and cook over medium heat for 15 to 20 minutes.

Step 3: at the end of cooking, pass the soup through a vegetable mill (not in a blender), put it back on the heat and bring to the boil.
