Cyril Lignac's recipe for the hazelnut financier
The ingredients for 4 people :
- 90g of ground hazelnuts
- 150g icing sugar
- ½ vanilla bean
- 60g flour
- 4 egg whites
- 100g of melted butter and hazelnuts
- 1 pinch of fine salt
- Icing sugar
To make Cyril Lignac's hazelnut financier recipe, you must have:
- 1 pan + 1 spatula + 1 bowl
- 1 salad bowl + 1 whisk + 1 spatula
- a 22cm buttered and floured snap mold
The stages of preparation of the financier with the hazelnut of Cyril Lignac:
Step 1 : preheat the oven to 185 ° C.
2nd step : in a frying pan, put the butter and melt it until you get a nutty color. Discard in a ramekin.
Step 3: in a salad bowl, combine the flour, ground hazelnuts, icing sugar, fine salt and the pulp of the vanilla bean. Add the egg whites one at a time with a whisk. Stir and add the brown butter. Pour into the buttered and floured cake mold.
Step 4: bake for 20 minutes.
Step 5: at the end of cooking, turn out onto a rack. Sprinkle with icing sugar.
