Curry, we love it. But did you know that there is not just one but an infinite variety of curries? Because under this known Indian name actually hides a mixture of spices. The recipe for shrimp sandwich-roll, curry mayo from Cyril Lignac

The ingredients for 4 people :

  • 1 egg yolk
  • 1 teaspoon of mustard
  • 15 cl of neutral oil
  • 1 teaspoon of curry powder
  • 18 cooked prawns, peeled and de-stoned
  • 1 green apple
  • 2 small lettuce hearts, washed
  • 1 avocado, halved and peeled
  • 4 homemade / baker / industrial hot dog buns
  • 1 lime
  • A few coriander leaves
  • Olive oil
  • Fine salt and fleur de sel

As for the utensils, you will need three salad bowls, a whisk, two tablespoons, a board, a slicing knife, a small salad bowl, a large plate, a saw knife, a frying pan, a spatula and a microplane.

How to prepare the shrimp sandwich-roll, curry mayo by Cyril Lignac

Detail the ingredients. Cut the shrimp into sections, the salad into small pieces. Cut an apple slice, evacuate the skin. Then cut a new strip half a centimeter thick to make a brunoise by cutting the apple into small cubes. Cut the avocados into small squares about twice the size of the brunoise. In a salad bowl, pour the shrimps, avocados, apple and mix all the ingredients. Then pour a spoon of mayonnaise into the salad. Mix everything until all the ingredients are well combined.

Cyril Lignac's trick for a successful mayonnaise

Place a tea towel on the worktop to stabilize the bowl. To make the mayonnaise, the egg should be at room temperature. Add the mustard and whisk together the mustard and mayonnaise. Then gradually pour in the oil in a small stream to build the emulsion. "The more oil is added, the more the mayonnaise rises."Add the curry powder and mix thoroughly.

Put the milk breads in the dry pan (without any fat) to toast them until the breads are well toasted and soft. Open the breads in half and stuff them with the shrimp mayonnaise curry vegetable preparation.

Finish by zesting the lime on top of the sandwiches and arrange cilantro leaves on top. Serve without delay.
