What if we brought the sun to our plate with a recipe full of freshness. Peppers, feta and quinoa, the perfect mix to get away from it all and enjoy yourself.

Ingredients for 4 persons:

  • 4 peppers of your choice
  • 200g feta
  • 120g of quinoa
  • 2 tomatoes
  • 1 courgette
  • 1 onion
  • 1 tablespoon of olive oil
  • Arugula
  • Salt and pepper

Preparation

Start by slicing the onion and brown it with the zucchini cut into small cubes in olive oil for 5 minutes. During this time, cook the quinoa in boiling salted water for 15 minutes.

Preheat your oven to 180 °. Then cut the peppers in half and remove the seeds. Place them in the oven for 10 minutes. Then dice the tomatoes and feta and put everything in a salad bowl with the quinoa once it has cooled. Add the onion-zucchini mixture and mix with salt and pepper.

Then fill the peppers with the stuffing. Place them in a dish, sprinkle with olive oil and bake for 15 minutes. Once cooked, sprinkle with washed arugula and serve immediately.
