For dessert or in four hours, we all fall for this delicious speculoos cheesecake, which does not even require baking!

Ingredients for six people:
- 200 g of seculos
- 80g butter
- 500g of cream cheese (Philadelphia)
- 25cl of liquid cream (30% fat)
- 125g sugar
- 1 vanilla pod
- 3 pears
Start by crumbling the speculos and mixing them with the melted butter. Once the mixture is homogeneous, line the bottom of a springform pan in which you will have placed a sheet of baking paper. Lightly tamp the mixture and then place the mold in the fridge.
Peel the pears and cut them into small pieces. Brown them in a dry pan so that they lose moisture. Once they stop juicing, let them cool.
In a salad bowl, mix the cheese with the sugar and the grains of the vanilla bean. Next to that, whip the crème fraîche and incorporate it into the cheese mixture.
Arrange the pears on the cookie base and then cover with the cheese mixture. Once the mold is filled to the brim, let the cheesecake set for at least 4 hours in the fridge.
