Autumn, in my opinion, is the most beautiful of the seasons. Among all the iconic things of this time of year, there is of course the apple. Available at the end of summer, it's a tasty and versatile fruit that can be eaten equally well in salads, with meals or as a dessert. We are lucky to have such a variety in Quebec. When the weather gets cooler, when the routine settles again, I like to find the comfort of my home and prepare a tasty and nourishing meal. I also like to use local and seasonal products. These days, the apple is found every week in my grocery basket and I like to cook it in different ways.
Of all the recipes I tested, I made you my small personal selection among those proposed by Marilou de Three times per day.
1. RHUBARB, APPLE AND WHITE CHOCOLATE CROQUADE
Only in the title, there is a dessert that I love composed of three ingredients that speak to me a lot. I knew I would like to even try. The combination is great! The recipe is here.
2. INVISIBLE CAKE WITH APPLE & MOLASSES
A cake made for minimalist people, or true lovers of the fruit. Simple, lactose-free, economical and beautiful visually. I would eat this cake every day. The recipe is here.
3. MUFFINS WITH GRUAU AND APPLE
A great idea for a nutritious lunch ready in no time, ideal for busy mornings. The kids will love it. Besides, I use applesauce regularly in my pastry recipes and muffins to replace a fat. In addition to adding a subtle fruity touch, it's a great way to dramatically reduce carbohydrates without sacrificing taste or texture. The recipe is here.
4. SOUP OF SWEET POTATOES, APPLES AND PANCETTA
What's better than a hot soup after a cool, rainy day? It sticks particularly with what I'm looking for this season: comfort, flavor and a little touch of greed (thank you the grilled pancetta). The recipe is here.
5. CREAMY SALAD WITH SWEET POTATOES, WILD RICE, GRAIN CHEESE AND APPLE
This salad is not flat: original, festive, tasty. It makes a great visit or can be enjoyed at home, with or without a special occasion. The recipe is here.
6. PORK FAJITAS WITH APPLE AND SHRIMPS
I have always found that the marriage of apple and pork was most happy. I've always loved Mexican-inspired cuisine. Sweet fajitas and just enough raised? I ship. The recipe is here.
If this was not enough to inspire you to sell your harvest of apples, Marilou offers on his site more than fifty recipes to cook the apple! There will certainly be one to your taste! Yum!
